Structural work such as roof trusses, beams and load-bearing posts needs timber graded for strength, with straight grain and minimal knots. This is not the place to save money with offcuts or lower-grade stock, a weak beam is a real safety risk.
Formwork and shuttering can use a lower grade since it is temporary and not load-bearing long term, but it still needs to hold its shape while concrete cures, so avoid timber that is already warped or badly split.
Finishing work such as door frames, window frames and interior fittings is where appearance matters most. Choose timber with a clean, even grain and check it has been properly dried, wet timber will shrink and crack after it is fitted.
